Mict chocolate chip ice cream has always been my hands-down favorite. Who knew how simple it was to make for myself?!

Heat milk, cream, and 1/2 C sugar over medium heat to dissolve sugar 5 Minutes Mix the egg yolks and 1/4 C sugar in a bowl using a hand mixer until the mixture is thick 2 Minutes Once heated and the sugar has dissolved, SLOWLY mix in 1/2 C of the cream mixture into the eggs; let stand a minute to ensure temperature, then return the egg mixture to the pot with remaining milk mixture. Set heat to low, and cook 8 Minutes until mixture coats the back of a spoon Strain into a bowl, 5 cup capacity or larger, and stir in salt, peppermint extract, and vanilla extract. If you wish to make the ice cream mint green, you can use 3 drops of green food coloring to 1 drop yellow food coloring Chill mixture for at least 3 hours, then churn in ice cream maker. Take the custard out of the refrigerator and pour into your ice cream maker. Follow the steps for your particular model. Add chopped chocolate chip pieces about 3/4 the way through your churning process. If using a Cuisinart ICE-30BC, churn for 25 minutes, adding the cookies in at the 20-minute mark. When the cycle has completed, transfer the ice cream to freezer-safe containers and store.
